Its first of four U.S. locations opened in the West Village in 2019, founded by three F&B industry veterans. We kind of added the elevated experience of tamaki and omakase, but kind of bringing it down to a level where it's accessible to everybody. This is open-faced, so we have an ability to still bring artistry and beautiful images and beautiful colors before people eat. Part of that concept includes lighting, intentionally designed to reduce shadows on the food and the tableware. My husband, who actually hand makes each one of the holders that we use, we wanted this really graphic shape, which we actually ended up patenting.
