Oscar Garcia Santiago, a Houston restaurant owner, attributes a 40 percent drop in sales to recent Immigration and Customs Enforcement (ICE) raids in his area, which have created an atmosphere of fear among both customers and employees.

The Texas Restaurant Association confirms this is a widespread issue, with 23 percent of surveyed restaurants losing employees and 21 percent seeing fewer job applicants. Industry leaders from across the United States are urging the federal government to introduce temporary permits for tax-paying immigrant workers, citing ongoing labor shortages throughout the food supply chain. In Texas, immigrants make up nearly a quarter of all restaurant workers, supporting an industry worth $138 billion to the state's economy.

Between that week and the week after, we had practically no sales. Spanish speakers and Latinos are often the targets of ICE raids. It is creating an atmosphere of fear in which even some employees are choosing to stay home. People were obviously afraid, in fact an employee who lives in that complex, she didn't show up here all week. According to the Texas Restaurant Association, it is an industry-wide problem. We asked restaurants all across the state, how are these immigration enforcement actions impacting your business? 23 per cent said they've lost employees, 21 per cent said they're seeing fewer job applicants or fewer people accept job offers. The association has joined together with nearly 1,000 different restaurant and hospitality leaders from all 50 US states. They are urging the US president to create temporary permits for tax-paying immigrant workers throughout America's food pipeline. We don't have enough workers in restaurants and farms and ranches and meatpacking plants. Basically every single step of our food chain. And as a result, all Americans are paying a lot more for the food that they consume from grocery stores and from restaurants. In Texas alone, nearly a quarter of all restaurant workers are immigrants, powering the industry that adds $138 billion to the state's economy.
