Her pre-sentence hearing attracted true crime fanatics and even members of the jury which found her guilty of murdering three of her relatives with a Beef Wellington recipe laced with death cap mushrooms. The sole survivor of the lunch, Ian Wilkinson, told the court, As the pastor's voice cracked, Mr Wilkinson told how deeply he misses his wife of 44 years, Heather, who was one of Patterson's victims. Then he extended a generous offer as a man of faith to the woman who left him fighting for life. I make an offer of forgiveness to Erin. I have no power or responsibility to forgive harms done to others and for the murders of Heather, Gail and Don, I am compelled to seek justice. However, I encourage Erin to receive my offer of forgiveness with full confession and repentance. Her estranged husband, Simon, lost both his parents to Patterson's deadly dish. He told the court he is now a single father to the couple's two children who are adjusting to life without their grandparents and the knowledge of what their mother did. The grim reality is they live in an irreparably broken home with a solo parent when almost everyone else knows their mother murdered their grandparents. The fact these foreseeable hurdles were actively put in front of them by their own mother is an impact we will wrestle for the rest of our lives. Erin Patterson always maintained her innocence, giving police alternative explanations for her relatives falling critically ill after the lunch and crying for television cameras. Two years on, she's still yet to confess, which haunts her victims' loved ones. Why did Erin decide that she'd make her life's work a portrait of death and destruction? I guess that's the final injustice in all of this, the lack of explanation, reason or remorse. Ian and Heather Wilkinson's daughter, Ruth Dubois, revealed she is also tormented by questions of why. There were multiple times during this process when she could have stopped, she could have cancelled the plans, she could have thought about the consequences, been honest, helped the medical staff, potentially changed the outcome, but instead at every step of the way she chose to follow through. And for the offender to sit and watch over casual conversation as while these people, who showed nothing but love and care for her, ate a meal that would kill, is beyond anything I could put words to. As the statements from her victims' loved ones were read to the court, Patterson was visibly upset. She wrung her fingers together and at times tears rolled down her cheeks. She was supported in court by just one person, a woman she befriended on the internet. The pair greeted each other with a smile as the triple murderer was led to the dock, flanked by two security officers. The court also heard details of Erin Patterson's incarceration at the Dame Phyllis Frost Centre. She has been given a computer, a hair straightener, books, magazines and spends her time crocheting blankets. The 50-year-old is being held in a restricted unit, unable to communicate with other inmates and is rarely granted access outside. Justice Christopher Beale will consider the victim's statements when he decides how long Patterson should spend in jail for murdering Don and Gayle Patterson and Heather Wilkinson.
