The EPCOT International Food and Wine Festival at Walt Disney World features more than 30 culinary kitchens and over 200 menu items, offering visitors a wide variety of international dishes and beverages. Disney chefs and beverage team members shared insights into the year-long planning process, which incorporates guest feedback, culinary trends, and new techniques, as well as their favorite dishes and drinks for the festival.

Highlighted offerings include a frozen pomegranate and raspberry tea with orange ice molecules, a pickle milkshake, Gulf Coast seafood roll, plant-based desserts, and returning favorites like the Greek melon limeade and Montreal Impossible Sliders. Festival-goers can also participate in activities such as Emile's Fromage Montage scavenger hunt and sample unique desserts like liquid nitrogen frozen pumpkin cheesecake and Pavlova with mixed berries.

The Epcot International Food and Wine Festival is one of the biggest festivals here at Walt Disney World, so I decided to fly out to Orlando, Florida to try it out. There are tons of countries to eat from and with over 30 unique culinary kitchens and over 200 items, you could spend days trying everything. Now before I dive into the festival, I met up with Chef Phillip and John from the beverage team to chat about their process in choosing the right dishes and their favorite items from the Food and Wine Festival this year. What goes into creating these amazing dishes? We're about a whole year out whenever we create things, so it's always our huge team comes together, we look at our guest feedback first and foremost, we look at different cultures that we have done before and what regions we haven't touched on, what can we bring in new techniques and what's just really current right now in the restaurant world when we bring stuff together. There's a lot that goes into also the drinks, a lot of them look really interesting like the pomegranate, tell me the story and how it goes into crafting these. Part of the beverage team, our job is to pair those beverages with the great work that the chef and the culinary team does, so a lot of inspiration from their flavors goes into what we do as well. We used to start with maybe your favorite dishes that you're excited for people to try out. I'm very excited about one of the drinks that we're going to be debuting on September 28th, it's going to be our pineapple colada over at our Gyoza's of the Galaxy Global Marketplace. I'm not even sure which one I would choose, but I'm taking a look at this one right here, it has some like special, what are these called? Those are orange ice molecules. Okay, I'm going to have to try this one, so it's a pomegranate drink? Yeah, so that is our frozen pomegranate and raspberry tea. So that's over at Brewing at the Odyssey, we had a partnership with the Muppets, so Dr. Benson Huntedoo and Beaker really helped us create this fun, wacky, really delicious frozen mocktail we have for our guests. Also at the Odyssey, where the Muppets have been doing an experiment, a pickle milkshake, it's definitely a must try for everyone. Honestly, one of my favorites right now is definitely our Gulf Coast seafood roll. We've had lobster rolls before here at the Food and Wine Festival, we're bringing it back finally. We have shrimp, lobster, some lobster bisque, creme fraiche on top, and a nice toasted brioche bun, this thing is delicious. What about this one right here? That one is our strawberry and champagne trifle, this is over at Shimmering Sips, one of our global marketplaces. This is also one of our plant-based dessert offerings we could have for our guests. We had our passion fruit cheesecake last year, this time over at Hawaii, we really wanted to bring the pineapple forward into it. So right here in front of you, we actually have our pineapple cheesecake, looks exactly like a pineapple, it's so cute, but it's delicious. Do you have any other drinks that you'd like people to try? Absolutely, one of our returning favorites is the Greek melon limeade, that's going to be over in our Greece global marketplace. Very light and very refreshing. Any other dishes that you're excited for people to come, maybe a dish that might have come back to Food and Wine? Yeah, right now coming back, we have our Montreal Impossible Sliders, this one's over at Flavors from Fire, we will be searing these right out there on these charcoal grills, it's going to have some bibb lettuce, tomato jam, plant-based garlic aioli, it's going to really be just a nice huge bite, but it's also plant-based for our guests. I have to ask, your personal favorite dishes across all Food and Wine and drinks? Korean fried chicken wings right here. I just love that umami flavor from the gochujang, it's tangy, all that savoriness, and then this is our first breaded wing we've done over the years, so it's just a nice crispy crunch. All right, what about you, Jang? Yeah, absolutely, over in Spain with the new menu, the paella caldoso, which is featured right over here, that is my personal favorite. It's got the perfect mix of mussels, shrimp, it's just absolutely amazing. Now that I know what to look out for, I decided to head on over to Brew Wing Lab to try out those orange molecules on top of the frozen pomegranate and raspberry tea, the curious taste of the pickle shake, and the delicious looking Korean barbecue. All right, so I'm trying three of the best chef-recommended items from the Muppets Lab, and here we have the frozen pomegranate raspberry tea with orange molecules. All right, let's try it. Whoa, okay, this is a sour one. This is very good if you like sour gummy worms. This is a drink for you. Okay, these are really good, and there's so many of them, too. They're lightly spicy, very, very mild, really delicious. All right, time for the pickle milkshake. Oh, wow, this is really good, really refreshing, lightly pickly, is that a right word? I think that exists, exists now, definitely a milkshake. If you want something refreshing, pomegranate frozen tea, definitely the good one. If you're hungry and want a good deal, the garlic parmesan's the way to go. The milkshake is probably what I'm going to take to keep enjoying food and wine. But before I could continue my journey, my producer surprised me with a cup of the swine brine from Flavors from Fire. It's an apple cinnamon cider with lemon juice, whiskey, Dijon mustard, and a piggy wing. Oh, my God, oh, this is good. The drink smells like pineappley, super refreshing, perfect for a hot day. Seriously, I'll probably share this. As I entered into Epcot's World Showcase, there were so many things to check out that I decided to focus my efforts on trying out items that I've never had before, which led me to the mango lassi in India. Oh, that's really interesting. I don't even know what it is. Oh, yes, it's mango. It's very smooth, almost like frozen like texture. It's refreshing, it's cold, very light, sweet mango taste. Here's a griddle cheese from Greece that has pistachios and honey. Mmm, I can taste the honey immediately. This tastes really good. I can't explain it. The nuttiness from the pistachios blends really well with the sweetness of the honey. And the cheese is so, so good. I would get this again. So not only can you get amazing, delicious treats here, you can also go on a fun scavenger hunt called Emile's Fromage Montage. And if you find five items from Emile's cheese menu, you get a special festival treat. And as the sun began to set, I decided to turn my focus to some desserts, specifically the liquid nitrogen frozen pumpkin cheesecake. Nothing says fall like flash frozen pumpkin mousse. This tastes like holidays, like fall and Christmas all at the same time. It's like a pumpkin pie. And for my last treat, I have the Pavlova mixed berries from Australia. The meringue is delicious. You can taste the berries, super sweet. The flavor lasts too. This is pretty good. The fun doesn't stop here because here at Epcot Food and Wine Festival, we have a whole park to explore.
