Espetos, wood-fired cooked sardines, are said to date to the 19th century, when hungry local fishermen would grill the cheapest fish in their catch on sticks wedged into the sand along the shore. This seafarer's soul food became a symbol of the region's cultural heritage. I love that smell. Hola. Hola. Que tal? Que tal? Como estas? Hola bien. Wow. It's traditional. The kind of wood, this olive, because the smoke that you need in the fish is this kind of aroma. For me, it's hypnotic. It's like magic, you know? It's not only a fish in a skewer. It's a real art. Do you want to do it? Yeah. Can we make one? Yeah. Oh gosh. I'm going to skewer some sardines. The most important thing is the bones taking in the skewer. You have here, this loin and this loin is exactly here. In the middle. You touch the spine, and you are going to put to the fire here, and then when it's back, let it burn. The support. Yeah. Ready? Okay. Feel. Feel the bone. Is it there? Yeah. Yeah. I did it? You have to feel. I didn't feel it. Let me do another one. Another one. And I'm going to... I feel it. Yay! I did feel it. Oh yeah, exactly. Look how beautiful that is in the sun. The sardines are so good, all I need is salt, fire, and a decent aim. I don't think it's going to cook it so far from the fire.
