The initiative, led by stadium caterers Levy UK, is being rolled out at 20 venues across the UK and Ireland. The move also includes eco-friendly packaging and condiments made from surplus vegetables, aligning with broader efforts to promote sustainable dining and reduce the environmental impact of large sporting events.

James Beale, head of sustainability and community at Brentford FC, said the menu change is taking a big bite out of the club's carbon footprint. Beef has the highest impact in terms of carbon emissions in all of our ingredients that we offer and we wanted to replace that with wild venison that has 85% less carbon emissions per kilogram than our beef burgers, so it has a massive impact. Independent studies vary in their assessment of the carbon gap between beef and wild venison depending on how emissions are calculated. Levy UK, the sports stadium caterers behind the move, said using wild venison reduces reliance on artificial inputs, lowers water pollution and improves land use by boosting biodiversity and woodland health. The company said they're rolling out the new menu offering across 20 venues in the UK and Ireland. The new wild venison burgers will also be served in eco-friendly packaging and include condiments made from surplus vegetables. Beale said the change scored some major points with fans. It's a popular dish, in fact it's more popular than the beef burger from last year. The strategy is part of a broader effort to remove high-carbon impact beef from Levy UK's menus and promote what it describes as more sustainable dining options. While the exact number of wild deer in the UK is not known, the British Deer Society estimates there could be as many as 2 million. Where numbers are not controlled, wild deer can be detrimental to the environment, farming and forestry, making the venison burger initiative a potential win for both stadium carbon footprints and the British countryside.
