Cold-hardy crops such as spinach, kale, lettuce, peas, radishes, carrots, onions, parsley, and chives can be planted early, as they tolerate chilly conditions. Proper preparation and careful timing help protect gardens from damage caused by unexpected late freezes and set the foundation for a successful growing season.
