By the time fans fill Levi's Stadium, dozens of chefs will be putting the finishing touches on meals they hope will be a touchdown for Chef Lou Bastion. It's his fourth Super Bowl. Do you feel some pressure on the Super Bowl Sunday? Oh no, not really. Honestly, we kind of live for this stuff. Among the eye popping and potentially belly busting options this year, the giant 3 1⁄2 pound LX burger, a super tender braised bone in beef shank with a blue cheese fondue on a baked inside of the burger. On a baked in the stadium bun, we create so several what we call wow items. We want people to be look whoa, that's Andy Lansing, CEO of Levy, the restaurant group feeding fans at 10 NFL stadiums and on Super Bowl Sunday. We're along for his final pregame taste test. The Chinatown dog is tasty, but trying it the mix of Chinese hot mustard and sriracha was packing a little too much punch. That's a big hot mustard. Yeah, you're getting that. Yep. Yep, too much for your OK. Yeah, because now it's all I can taste. The bread cuts it, which is good, but. You may play around this with this one a little bit. As you are getting whacked with that mustard and how about a new take on the nacho freshly caught Dungeness crab on locally made potato chips with a white cheddar fondue Levy handles food from hot dogs in the stands to luxury boxes and stadium clubs where this almost melt in your mouth 12 hour brined and smoked short rib pastrami will be served. A recipe Levy chefs have been refining all season. This is one of the greatest items I've ever tasted, and they said we we we brine this for 18 hours. And I said, let's try an experiment. Let's take an hour off each day. Let's do it for 17. Let's do it for 16. And when we got down, this one is a 12 hour and it's perfect. What about it made you go? This is going to the Super Bowl because I think everybody loves pastrami. You never see people do a smoked. Short rib pastrami, a common approachable item like pastrami, but done in a way nobody's ever seen. 90% of the food is locally sourced. Many of the vegetables in this vegan cheesesteak actually come from the stadium's rooftop garden. And then let's talk about dessert. The San Fran sticky roll is a sourdough cinnamon roll topped with sponge sugar and tasty icing. That's really good. Well, the frosting is good. I like this texture of the sponge sugar. You get a couple of crunches from the sprinkles that are on top. Wow. It's gooey, but not like too gooey. That is a home run.
